I didn’t have high expectations for the bak kut teh because in my mind I thought, “It’s just a bowl of pork bone soup – how good could it be?” Well it was good, VERY GOOD. The Singaporean version, with a Teochew influence, has a light but very peppery broth, whereas the Malaysian version (I heard) has a much darker broth as a result of the variety of herbs that are added. I rather liked the peppery broth. And the pork bone – oh the meat was so flavourful and tender that it fell right off the bone. It was like the best bowl of home-made pork bone soup (that my mom makes often) that I’ve ever had except…even better. I need to see if I can find the spice packs to recreate this at home…!
