Hairy tofu is a specialty of the Huizhou region in Anhui province of China, and it got its name from the layer of white, misty “hair” that forms during its fermentation. Of course, you’d expect something like stinky tofu, with a pungent odour. And that it did, though it wasn’t too offensive. What surprised me was that this grilled hairy tofu was suuuuuuuuuuuper soft, and the texture combined with the mild stink really worked well for me!! I actually loved it more than I had expected!!! But the icing on the cake was the chili sauce on the side – it was damn spicy but I just couldn’t stop immersing my tofu in it. SO GOOD ❤
