It seems like in recent years, crayfish has become a fad or viral trend around China, especially in Hubei province. I don’t mind it, but the taste-to-effort ratio just doesn’t seem worth it because you spend so much time dirtying yourself to deshell the thing…and you end up with next to no actual meat. And most people go for the hot and spicy flavour, as shown in the photo, but personally I prefer the garlic-covered version.
