Salmorejo is a traditional puree that originated from Cordoba, Spain, and is a thick soup-like dish made of tomatoes, bread, garlic, and oil, and topped with serrano ham and diced hard-boiled egg. The consistency is so thick that I’m not sure if it was meant to be eaten as a soup or a dip with bread. I went for the latter not knowing if it’s the correct way of eating it, but I certainly liked it as a paste full of garlic and tomato flavour!
