Water-cooked pork slices

The term “water-cooked” is misleading because one would think that a water-cooked dish would be, as the name implies, cooked in water and as a result, bland or lightly flavoured. That would be the complete opposite of Chinese “water-cooked” dishes because in addition to water, loads and loads of spices and chili peppers are added to result in an extremely spicy dish. My Sichuanese friend made this water-cooked pork dish and it was the first time I’ve ever tried a home-made version. Hot and delicious but I couldn’t feel my tongue afterwards!
