The Chinese word for “salad” is literally translated to “cold-mix”, which is exactly what it is – a cold mixture of whatever you want to put in the salad. My mom’s spontaneous creation resulted in this cold-mix, consisting of cucumber, enoki mushrooms, cilantro, and…I’m not even sure what those square blocks are, but I think they’re dried tofu of some sort. Add a bit of chili sauce and it’s perfect – only if you remove the cilantro though, I won’t eat that!
