I do not comprehend why people eat bitter melon. It boggles my mind because well…it is super bitter and I cannot understand how people enjoy it! My mom though, like many Chinese, like to use it in her cooking sometimes, even with “unique” combinations like beef short ribs and pig stomach. I know, it already doesn’t sound too appetizing but hey, I’ll take the short ribs and pig stomach, thank you very much, but please keep the bitter melon far, far away from me!
